There’s nothing quite like sitting on a mountaintop, breathing in crisp alpine air, and slurping down a hot, flavour-packed bowl of pho. We’ve been dreaming about cooking a beef pho on the trail for ages—and during the filming of our brand story video on the stunning Tarn Shelf in Tasmania, we finally made it happen!
Let’s just say… this one’s a keeper.
This trail-friendly pho is lightweight, super quick to cook, and ridiculously tasty. It’s the perfect camping or hiking meal—especially after a long day on the track. All the ingredients are freeze-dried to lock in flavour and nutrition, and the best part? It only weighs 132 grams dry per serve. That means more fuel for your body without weighing down your pack.
I’m a sucker for wandering into my local Asian grocer or deli and hunting down new ingredients to pair with our Campers Pantry range. This one was a winner—and trust me, you’ll want to try it on your next hiking, camping, or overnight trekking trip.

✅ 1 serve Campers Pantry Beans – 7g
✅ 1 serve Campers Pantry Broccoli – 6g
✅ 1 serve Campers Pantry Beef – 31g
✅ Vermicelli rice noodles – 70g
✅ 1 serve Beef Pho cube – 18g
✅ Fresh or dried chilli, finely chopped
✅ Fresh or dried basil for garnish
🔥 Boil 500ml of water using your hiking stove.
🍜 Add your noodles and the beef pho cube. Let them simmer until the noodles soften and the cube dissolves.
🌿 Toss in the freeze-dried veggies and beef. Push them under the water a few times to help them rehydrate—this takes just seconds!
🌶️ Garnish with chilli and basil.
